Nicaragua, Madriz
Several years ago the San Juan del Rio Coco R.L. Cooperative implemented a production plan for organic certified coffees. It turned out to be a success and their organic coffees have since then shown impressive sales – which is a rarity in the established coffee market.
Furthermore, it is worth mentioning that San Juan R.C. R. L. UCA, since 1993, is one of the first organizations to dedicate themselves to growing and promoting organic coffees.
This coffee is a “classic” coffee with a nice balance. It has an aromatic sweetness and fruitiness. The coffee is mild and pleasant has a bright and fine citrusy acidity.

Honduras, CACTRIL
The cooperative, CACTRIL is a member of Productores Agricolas Organicos La Trinidad. CACTRIL is located in the municipality of Trinidad, in the region of Santa Barbara, Honduras. CACTRIL was established in 1968 with the purpose of improving the quality of life of coffee producers as well as providing them with support regarding the harvesting of coffee. It has now more than 200 members and approximately 1900 people work there.
This coffee has a fantastic and sweet aroma of almonds and red berries. The coffee has light, lively and fruity nuances which are in perfect balance with the pleasant aftertaste of sweet chocolate.

Bolivia, El Alto
In more than one way, Bolivia has the ideal conditions for growing coffee. One of these is the fact that Bolivia has abundant opportunities for growing coffee in high altitudes, which is a basic ingredient for cultivating good quality coffees.
Despite these good conditions Bolivia has had problems growing coffee of a sufficient quality in the past, because the coffee farmers had to transport their coffee over very long distances before the final processing of their harvest could occur. During this long transportation period the coffee often over-fermented causing unpleasant taste and aroma. Now, most coffee farmers in Bolivia process their coffee themselves, thus creating jobs in their local community whilst ensuring a high quality coffee before transporting it to La Paz.
Bolivian coffees are characterized by being a ”clean cup”, which makes them very delicate. This coffee has a fantastic aroma with a delightful sweet hint of marzipan and chocolate. The taste is a nice balance between richness and acidity. This is a medium-dark roast, which gives the coffee more body.

Ethiopia, Sidamo-4
Ethiopian coffees are renowned for their extraordinary high quality and in 2005 the Sidamo-region was awarded for producing the second best coffee in the world, by the SCAA Cupping Pavillion.
Ethiopia is known for disparate and indefinable coffees, and even though the country is often plagued by droughts Ethiopian farmers are still able to produce some of the finest and unique coffees. Ethiopian coffees have a very special character, which you simply have to taste.
This coffee has a wonderful rounded aroma with a dark and rich aftertaste of chocolate. Its sweetness is characterized by a pleasant taste of strawberries.

Mexico, Chiapas
In Chiapas, close to the Guatemalan border, we found the cooperative Union Ramal. It was founded in 2001 with just 80 members and has now grown to include 537 members – and 450 of those are growing organic certified coffee. Like most of the Mexican coffee farmers, Union Ramal are focused on organic coffee production – in fact, out of Union Ramal’s capacity of 696 tons, 621 tons are organic coffees. Therefore, this coffee is of course also organic.
This coffee is very pleasant and has a nice, sweet aroma of butterscotch. The taste is bright and lively with fine acidity, but with delicate sweetness which enhances the balance in the cup. It is finished with an aftertaste of dark chocolate.
